Perfect Dictation sees that you are in Apple Mail and writes the way emails are written. Change it any time, or make a style of your own.
Want it different? Make your own style in plain words, like "keep it under three short sentences".

Fix a name once in History and it is spelled that way from then on: people, products, your company.
Every app with a text box works. These get a style picked for them automatically.
